Spaghetti with Tomato, Garlic & Basil Sauce

Vegetarian

Ingredients
serves 4

5 tbsp extra-virgin olive oil
1 onion, chopped finely
800 g/1 lb 12 oz chopped tomatoes
4 garlic cloves, cut into quarters
salt and pepper
450 g/1 lb dried spaghetti
large handful fresh basil leaves, shredded
fresh Parmesan cheese shavings, to serve

Method


  1. Heat the oil in a large saucepan over medium heat. Add the onion and fry gently for 5 minutes until soft. Add the tomatoes and garlic. Bring to the boil, then simmer over medium-low heat for 25-30 minutes until the oil separates from the tomato. Season with salt and pepper.
  2. Cook the pasta in plenty of boiling salted water until tender but still firm to bite. Drain and transfer to a warmed serving dish.
  3. Pour the sauce over the pasta. Add the basil and toss well to mix. Serve with the Parmesan cheese shavings.
